Mum’s Homemade Mushy Peas (V)

This simple recipe easily made it to the top of the list.  While I am a huge lover of regular peas, mushy peas never really appealed.  That was until my mum served up a portion of her own homemade, creamy, delicious mushy peas.  A fantastic side with fish and chips, these mushy peas are super simple to make and will be ready in minutes.

Ingredients: 400g frozen peas, 20g of butter, 3tsp double cream.

Method: Boil and drain the peas. Put them in a blender with the butter and cream and whizz to required consistency. 

Mum’s Top Tips: Don’t completely puree in the blender, leave them more crushed.  Add a hint of tartar or mint sauce for flavour.  For a healthier recipe, replace butter with sunflower spread and the cream with Elmlea.

Classic Pea and Ham Soup

A quintessentially British dish, this healthy and filling lunch will warm your insides on those chilly winter days.
